It's been a hot minute since I deep/shallow fried anything, but since I wanted to try this freeze/thaw tofu method, I decided to give the air fryer a break and bring out the oil.
Fried tofu "Gator*" nuggets with black beans, yellow turmeric rice, and garlic greens. A dash of hot sauce for good measure.
As far as the freezing tofu method goes, I can honestly live without that extra step. It does change the texture a bit (more airy/spongy) and makes it easier to press the water out, but I don't see it as a must. If you can buy tofu in bulk, then yeah, go ahead and freeze them. Otherwise, I find it unnecessary.
*Believe it or not, I wasn't always vegan. And back in those days growing up in southern Florida, I used to eat gator tail. So I decided to mimic that with some seasoning blend because tofu can become almost anything you want it to be with the right seasoning.
Simmered the shiitake and kombu in a fresh pot of water to get a second helping of dashi which is great for flavouring stir fries, or as a base for sesame sauce and so on!

Heute gab es für den Spieletreff die richtigen Baozi, gefüllt mit Erbsen, Shiitake, Roten Zwiebeln, Knoblauch, Poree, Tomatenmark, Azuki-Paste. Dazu einen Salat, aus Rotkohl, Möhren, Gurken, Öl-Essig, Sojasosse, Petersilie und Furikake.
Teig hatte dank dem wunderbaren @eickefrohwein noch etwas süsse Paprika bekommen und war dadurch viel besser!
